EUGENE, Ore. — It was a milestone weekend for a local nonprofit that hand makes and delivers hot, vegan meals to people in need.

The Burrito Brigade works to alleviate hunger in Eugene and Springfield. On Sunday, volunteers served their 100,000th meal since the nonprofit got started in 2014.

On Sunday, they used fresh ingredients fill more than 500 bean, rice and roasted veggie Burritos. Once assembled, the Burrito Brigade delivered the foil-wrapped meals by foot, bike or car to people in need in both Eugene and Springfield.

“We strive to make a very nutritious burrito, something healthy…maybe they just had a bad day and you’re handing them a hot meal that is packed with nutrition. It can totally make their day…it can totally turn around that day,” said Organizer Jennifer Denson.

Volunteers gather every weekend to prepare these burritos. They meet at Bethesda Lutheran Church on Saturdays and at First Christian Church on Sundays.
